Press portions into carved wooden moulds — seasonal forms such as chrysanthemum, full moon, or bamboo — applying firm, even pressure to achieve consistent shell thickness throughout. Unmould carefully. The surface should release cleanly and hold the mould's scoring pattern.

    Bake the pressed shells at moderate heat until they are pale gold. A properly baked shell shows faint caramelisation without browning at the edges and carries no raw-starch taste. Underbaked shells will taste of raw flour; overbaked shells crack during assembly.     To prepare azuki an: simmer sorted azuki beans in ample water, discarding the first water after five minutes to remove bitterness.
