  1. 1
Place the carrots in a saucepan, cover generously with cold salted water, and bring to a boil. Cook until completely tender throughout — not al dente — because a carrot that still holds a bite at the centre will resist the dressing rather than drink it in; a skewer must meet no resistance at the centre. Drain immediately.
  2. 2
While the carrots drain, toast the whole cumin seeds in a dry pan over medium heat until fragrant, shaking the pan so they colour evenly without scorching. Grind them immediately to a powder, because cumin ground while still warm releases oils that a stale jar has long since lost, and those oils are what give the dish its depth rather than a flat, dusty note.
  3. 3
Slice the hot drained carrots into rounds, or mash them roughly — the texture is a matter of preference, but some body should remain. Work quickly so they are still steaming when the dressing goes on, since that heat is what allows the spices and acid to be drawn in rather than simply resting on the surface.
  4. 4
Immediately, while the carrots are hot, combine the olive oil, garlic, freshly ground cumin, sweet paprika, harissa, and white-wine vinegar or lemon juice, and pour the dressing over the carrots. Toss well so every surface is coated, because hot carrots draw the oil, spice, and acid inward in a way cold carrots never will, and a salad dressed cold produces a coated-but-not-integrated result.
  5. 5
Leave the dressed salad to rest, uncovered, for a full twenty minutes before serving, so the flavours knit together and the carrots settle from hot and sharp to warm and rounded. At the end of the rest, taste and adjust salt, acid, and harissa — the flavour should read as a single unified preparation, sweet-earthy carrot, assertive cumin, paprika warmth, and a background heat, not as a dressed vegetable with separate seasoning notes.
  6. 6
Serve at room temperature or slightly warm. Scatter fresh coriander and lightly toasted almond slivers over the surface immediately before bringing the dish to the table, so the almonds hold their crunch and the coriander keeps its brightness against the warm spiced base.
