Method

  1. 1
Fillet the sardines and run a fingertip along each fillet to locate and remove all pin bones, because a bone hidden inside a patty cannot be seen once the mixture is combined and poses a real danger at the table. Lay the fillets flat and chop them by knife, working the blade until the flesh is very fine but still retains some visible texture — a food processor reduces it to a smooth paste that turns rubbery and dense in the pan. The mince is ready when it holds together under gentle pressure but still shows the grain of the fish.
  2. 2
Transfer the chopped sardine to a bowl and add the coriander, parsley, garlic, cumin, pul biber, paprika, lemon juice, and sea salt, then work the mixture together with the hands so the herbs and spice are evenly distributed through every part of the mince rather than sitting in pockets. Add the breadcrumbs and fold them in, using only enough to achieve cohesion, so the mixture smells powerfully of cumin and fresh herbs rather than of starch. Stop mixing the moment everything is uniform — overworking compacts the mixture and makes the finished patty dense.
  3. 3
Divide the mixture into eight equal portions and shape each into a flat oval patty approximately 1 cm thick. Set them on a tray and rest for five minutes so the breadcrumbs can absorb the moisture evenly, which means the patties will hold their form when they meet the hot pan rather than crumbling at the edges.
  4. 4
Heat the olive oil in a heavy frying pan over medium-high heat until it shimmers, then lay in the patties without crowding, because overcrowding traps steam and the patties will stew pale rather than colour properly. Cook for approximately 3 minutes on the first side without moving them, so a firm crust can build and the patty will release cleanly from the pan when it is ready to turn. The underside is ready when it lifts away without resistance and shows a deep, even gold; the sardine fat renders as it cooks and bastes the patty from within, so no additional basting is needed.
  5. 5
Turn each patty once and cook for a further 3 minutes; sardine kefta must be cooked fully through, because sardine eaten rare carries an unpleasant raw-fish taste quite unlike, say, fresh tuna, and no amount of seasoning will mask it. Press the centre gently — it should feel firm with no give, and the exterior will be deeply golden on both sides. If the centre still yields softly, give the patties another minute rather than trusting the clock alone.
  6. 6
Lift onto a warmed plate and serve immediately with lemon wedges for squeezing and a small dish of harissa alongside. The kefta hold little heat in reserve and are best eaten at once.
