Combine the coarsely chopped green olives, black olives, giardiniera vegetables, capers, garlic, and dried oregano in a bowl. Pour the olive oil over and stir to coat. Transfer to a sealed container and refrigerate for a minimum of 24 hours; three days produces a more unified result. The salad is ready when the oil has taken on the colour and scent of the olives and the individual components smell like a single thing.

Remove the olive salad from the refrigerator and bring to room temperature. Split the muffuletta loaf horizontally through its equator, creating a top and bottom half of equal thickness. The crumb should be dense and tight — if it tears or compresses under light pressure, the bread will not survive the oil load.

This is where the muffuletta lives or dies. Spread 3 to 4 tablespoons of olive salad across the cut face of the bottom half, distributing it to the edges so no quadrant will be left dry when the sandwich is quartered. The bread should begin to show oil migration at the surface within a minute — this is the intended result, not a fault.

Layer the Genoa salami over the olive salad, covering the surface evenly. Lay the capicola or mortadella over the salami. Follow with the provolone and then the Swiss cheese or emmentaler. The meats and cheese are supporting layers; their role is to carry salt and fat, not to dominate.

Spread a second layer of olive salad — again 3 to 4 tablespoons — across the cut face of the top half of the loaf. Place the top half onto the assembled bottom, olive-salad face down, and press firmly but evenly so the halves meet flush.

Wrap the assembled muffuletta tightly in butcher paper or cling film. Rest at room temperature for 30 minutes to 1 hour. The sandwich is ready when the bread yields slightly under palm pressure — indicating the oil has migrated into the crumb — and the loaf no longer feels rigid.

Cut into four equal quarters with a sharp serrated knife. Each quarter should show a cross-section of clearly distinct layers — olive salad, meat, cheese, olive salad — with oil-darkened bread at both cut faces. Serve immediately at room temperature.
