    Cook short-grain white rice and allow it to rest, covered, until warm but no longer steaming. The rice must be sticky enough to hold the musubi's shape — too dry and it crumbles, too wet and it turns gummy. Press a small amount between two fingers: it should compact and hold without weeping moisture.

    Turn the warm rice into a bowl. Scatter furikake over the rice and fold through with a rice paddle until the seasoning is distributed evenly throughout. The rice should carry a uniform speckled appearance with no dry pockets of furikake remaining.

    Line the musubi mould with a strip of nori. Pack the seasoned rice firmly into the mould in a single dense layer. Press the lid down with even pressure. The block should release cleanly, holding a rectangular form with sharp edges.

    Unmould the rice block onto the centre of the nori strip. Wrap the nori tightly around the rice, sealing the join underneath. The nori should adhere to the rice on contact; if it does not, dampen the seam lightly. The finished musubi is compact, self-contained, and does not splay when set on a flat surface.

    Hold the wrapped musubi at room temperature for two to three minutes before serving. The nori will draw moisture from the rice and soften slightly at the joins while retaining a light crispness on the outer face. The aroma of nori and seasoned rice should be present and immediate.
