Method

  1. 1
Place the whole aubergines directly over a gas flame or under the highest grill setting, turning occasionally with tongs, so that the skin chars completely and the heat penetrates all the way to the centre rather than merely blistering the surface. Char until the skin is entirely blackened and the aubergine has visibly collapsed and feels completely soft when pressed. The smoke released during this stage is the dish's defining flavour; insufficient char cannot be corrected later. Transfer to a colander.
  2. 2
When cool enough to handle, peel away and discard all charred skin, working carefully so no bitter, blackened flakes remain in the flesh to turn the finished paste acrid. Set the collapsed flesh in the colander and leave to drain for at least 20 minutes, pressing gently to expel further liquid, so the excess water leaves now rather than loosening the tahini later. The flesh should feel dense rather than waterlogged before proceeding.
  3. 3
Pound the garlic cloves with the salt in a mortar until a smooth, uniform paste forms with no visible pieces remaining, the salt acting as an abrasive that breaks the garlic down into something fine enough to distribute evenly through the finished dip rather than landing in sharp bursts.
  4. 4
Chop the drained aubergine flesh coarsely on a board, transfer to a bowl, add the garlic paste and lemon juice, then begin incorporating the tahini a spoonful at a time, stirring after each addition and tasting as you go, because the aubergine's residual moisture governs how much tahini it will absorb and adding it all at once risks a paste that seizes or turns slack before you can judge it. Continue until the mixture is thick, creamy, and neither loose nor stiff. Season with salt.
  5. 5
Spread the mutabal onto a shallow plate, forming a well in the centre so the olive oil pools there and stays glossy at the table rather than running off the edges. Drizzle with olive oil, dust with paprika, and scatter the pomegranate seeds across the surface. The dish is ready when the oil pools in the well and the pomegranate seeds stand proud against the pale, smoke-streaked paste.
