Method

  1. 1
Combine the fish sauce, tamarind liquid, and palm sugar in a bowl, stirring until the palm sugar has fully dissolved so its sweetness weaves into the base rather than sitting as a separate note at the finish. The liquid should smell sharply sour and saline, with sweetness arriving last on the nose.
  2. 2
Add the dried chilli flakes and the freshly toasted rice powder, stirring to incorporate. This is where the dish lives or dies: the rice powder must be freshly made — stale powder yields no nutty character — and the quantity must be sufficient to provide both textural crunch and a perceptible nutty note without dominating. Too little, and the sauce is indistinguishable from a plain chilli-fish sauce.
  3. 3
Add the thinly sliced shallots, spring onions, and coriander, then stir once to distribute, so the herbs sit through the sauce rather than clumping at the surface. The sauce is ready when the rice powder crunch is perceptible through the sliced herbs and the colour is a deep amber-brown from the tamarind.
  4. 4
Taste the finished sauce — it should be assertively sour-salty, with the tamarind delivering a dark, slow tartness distinct from the brightness of lime, the fish sauce providing clean salt and umami, and the palm sugar resolving both into background sweetness. The rice powder must be perceptible as a crunch and as a nutty flavour note: present, but not dominant.
