    Combine the rice vinegar, dashi, mirin, soy sauce, and sugar in a small saucepan. Warm over a medium flame to 65°C, stirring until the sugar dissolves. Remove from the heat. Scatter the sliced green onion, ginger, and chili into the marinade. The marinade should smell sharply acidic with a clear sweet note underneath.

    Pat the fish completely dry with paper towels. Dredge each fish in flour or potato starch, shaking off every excess trace. Heat the frying oil to 180°C in a deep, heavy vessel. Fry the fish in uncrowded batches until the skin is deeply golden and the fins and tail have crisped rigid — approximately 4–5 minutes per batch depending on fish size. Lift and drain briefly on a rack, not paper, so the crust retains its snap. This is where the dish lives or dies: fish that is under-fried will disintegrate in the marinade rather than softening to the desired silky-firm texture; the crust must be completely set before marinating begins.

    Transfer the fried fish immediately while still hot into a single layer in a deep ceramic or glass dish. Pour the hot marinade and its aromatics directly over the fish. The marinade should sizzle briefly on contact. At 65°C the marinade will penetrate the flesh within 20 minutes; at room temperature, allow 2–4 hours. The fish should be fully submerged; tilt the dish or add a small plate as a weight if necessary.

    Rest uncovered for a minimum of 30 minutes. Two to four hours produces the optimal balance: the acid has diffused, the mirin has tempered the vinegar's sharpness, and a mild proteolysis has begun to deepen the savory quality of the flesh. Do not exceed 8 hours, as the acid continues working past the flavor optimum and will render the flesh mushy. The fish is ready when the flesh nearest the spine has lost its raw opacity and taken on an even, pale, just-cooked colour throughout.

    Remove from the refrigerator, if it was stored cold, at least 20 minutes before service. Plate at room temperature: cold mutes the aromatic vibrancy that defines the dish. If using myoga and shiso, lay them over the fish at this stage — they will wilt gently from the marinade's residual acid, forming a soft aromatic nest. The finished dish should carry a clean sweet-acid nose, a toasty, nutty quality from the Maillard crust, and a firm yet yielding flesh.
