    Turn the natto into a bowl and stir vigorously with chopsticks in one direction, counting no fewer than 200 rotations. The mass will lighten in colour, develop visible foam, and form long, elastic strand bridges between the chopsticks. This is the structural network the roll depends on. Stir until the strands are pronounced and the mixture holds together in a cohesive, glossy mass.

    Place a halved nori sheet shiny-side down on a bamboo rolling mat. With wet hands, spread 80 g of shari across the nori in an even layer, leaving a 1 cm border at the far edge. Work quickly and without compressing the rice excessively.

    Spread a fine line of karashi mustard across the centre of the rice. Spoon the stirred natto along the mustard line in a contained, narrow band. Do not overfill: natto expands slightly with ambient warmth, and excess filling will burst the seal.

    Lift the near edge of the mat and roll forward in one confident motion, pressing firmly to seal the nori edge. Hold the shaped roll under gentle pressure for ten seconds. The finished roll should be firm and even, with no visible seam gap.

    To cut the natto maki: wet a sharp yanagiba or thin-bladed knife. Position the blade at the roll's midpoint and apply a single decisive forward-pressure stroke without dragging. Wipe and re-wet the blade between every cut. The strand network of the natto bridges between sections; any sawing motion will drag the filling and distort the round form. A clean cut yields six even pieces with the natto visible at the cross-section.

    For the ume-shiso hosomaki: lay a halved nori sheet on the mat and spread 80 g of shari as before. Lay two whole shiso leaves flat across the rice, covering it in a single intact layer. Spread a thin line of umeboshi paste directly onto the shiso—not onto the rice. Roll, seal, and cut as for the natto maki. The shiso should remain as a continuous aromatic sheet inside the roll, not dispersed; its intact structure is apparent when the roll is cut.

    For the kappa maki: use cucumber batons that are cold and firm. Lay the batons along the centre of the shari. Roll and cut as above. A wilted or room-temperature cucumber will have released water; the shari around it will feel soft and yield rather than spring back when pressed—discard such a roll.

    Serve natto maki immediately at room temperature. Do not refrigerate or hold for more than 30 minutes: cold natto loses its strand activity and its flavour range contracts. Arrange all rolls cut-side up on a board or plate. Offer gari and soy sauce alongside.
