    Prepare all kazari-giri cuts before any heat is applied: shape carrots into five-petal flowers, slash konnyaku rectangles at the centre and twist each into a nejiri loop, and notch lotus root rounds into fans. This decorative work is the mark of formal nishime and cannot be done once the vegetables are softened.

    Blanch each vegetable separately in unseasoned boiling water — burdock and lotus root for 3 to 4 minutes, konnyaku for 2 minutes, taro until the surface turns opaque. Drain and reserve each apart from the others. Blanching removes harshness and sets each ingredient's colour before seasoned simmering begins.

    For each ingredient in turn, combine 200 ml dashi, 2 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sake, and 1 tsp sugar in a small saucepan. This is where the dish lives or dies: the broth must be calibrated separately to each ingredient's density — burdock and lotus root require 30 minutes or more at a steady simmer; carrot and taro require 15 to 20 minutes; konnyaku 10 to 12 minutes. Never combine ingredients in one pot. A single shared pot causes soft items to collapse before dense roots are done, and purple konnyaku will discolour carrot and burdock irreparably.

    Simmer each batch over medium-low heat, fitting a drop-lid (otoshibuta) directly onto the surface to keep the broth in constant contact with the ingredients. Continue until the liquid is fully absorbed and the pan is nearly dry. A well-made nishime leaves no excess sauce; the gloss on each piece comes from the absorbed dashi itself, not from a pooled sauce beneath it.

    Allow all components to cool separately to room temperature. Taste a piece of burdock and a piece of taro: both should carry the sweet-savory soy-mirin framework to their centres, with the character of the vegetable still distinct. If the seasoning is only a surface coating, return the piece to a small measure of fresh broth and simmer until absorption is complete.

    Arrange the finished components in an osechi jubako box or a deep serving vessel, alternating orange carrot, white lotus root and taro, brown burdock, and dark konnyaku so that no two colours of the same kind are adjacent. Rest, covered, for one to two days before service: the flavours equilibrate during this period and nishime is at its peak on the second day.
