    Divide the cold leftover rice among four bowls — lacquered bowls for the formal dashi version, plain ceramic for the everyday hojicha version. The rice should be cold and compact, not loosened. The thermal contrast between cold rice and hot liquid is essential to the correct texture.

    For the hojicha version: brew hojicha at approximately 90 °C and bring it to the table or pour immediately while very hot. For the dashi version: heat freshly drawn ichiban dashi and season it lightly with fine sea salt and a small measure of light soy; it should taste clean and saline, not assertive. The quality of the liquid at this point decides everything. Weak, flat, or stale tea, or instant dashi, produces a flat, joyless result. Good hojicha or fresh ichiban dashi produces a bowl of quiet clarity. This is where the dish lives or dies.

    Place one or two toppings only on the cold rice — umeboshi, salmon flake, nori strips, a dab of wasabi, or a single shiso leaf for the kaiseki form. Restrain the hand: the simplicity of ochazuke is its point, and competing toppings undermine its restorative character.

    Pour the hot tea or seasoned dashi directly over the rice and toppings at the table. Use enough liquid to partially submerge the rice — the grains should absorb at the edges while remaining distinct at the centre. If arare rice crackers are used, scatter them at this moment only, so they retain a brief crunch before softening.

    Serve immediately and eat without delay. The correct moment is when the rice has begun to absorb the liquid and swell slightly at its edges, while the centre of each grain remains firm — a texture produced only by cold leftover rice meeting hot liquid, not by freshly cooked rice.
