    Warm the olive oil in a heavy pot over low heat. Add the cubed speck and render slowly, stirring occasionally, until the fat runs clear and the cubes are lightly coloured at the edges. The fat in the pan is the flavour base of the entire dish; do not rush this step. Done when the speck has released its fat and the kitchen carries a clean smoke.

    Add the chopped onion and bay leaves to the rendered speck fat. Cook over medium-low heat, stirring, until the onion is soft and translucent but not coloured. Done when the onion yields no resistance and the raw smell has left the pan.

    Add the julienned brovada to the pot and cook in the speck fat, stirring, until the strips have slightly softened and their sharp, fermented tang has begun to mellow into the fat. This step cannot be skipped: brovada added directly to broth retains a raw fermented edge that never integrates. Done when the brovada is pliable and the sour-marc aroma has rounded.

    Add the pearl barley and stir to coat in the fat. Pour in the hot broth — and the pork rind if using — to cover generously. Bring to a steady simmer, cover, and cook for 50 minutes, stirring occasionally to prevent the barley settling and scorching on the base. Done when the barley is completely swollen, fully tender with no chalky core, and the brovada has largely dissolved into the soup with only a few strips remaining visible for texture.

    Remove from the heat. Discard the bay leaves and pork rind. Scatter in the fresh marjoram leaves and add the cold butter in small pieces. Swirl and stir to emulsify the butter into the broth without breaking. Done when the surface carries a faint, even sheen and the butter is no longer visible as discrete pieces.
