    Inspect each live urchin before any cutting. The shell must be closed, the spines responsive to pressure, and the surface free of slackness. Place the urchin mouth-side down. The cook is satisfied when every specimen passes the olfactory test — clean marine-iodine, no trace of ammonia — before the scissors or oursinade knife is taken up.

    Insert the scissor point or oursinade knife at the pole opposite the mouth — not at the mouth itself — and cut a clean circle of shell approximately 4 cm in diameter. Remove the cap. This is the line the dish cannot cross: cutting at the correct pole preserves all five roe segments intact; cutting at or near the mouth severs them. The cook is satisfied when the interior reveals five distinct, unbroken orange corail lobes arranged symmetrically.

    Using a small spoon, remove all black viscera — the intestinal matter — from the cavity. Work carefully around each corail segment. A single trace of intestine remaining introduces bitterness that no subsequent treatment will correct. The cook is satisfied when the cavity floor is clean and the corail alone remains, each lobe plump and unsmeared.

    Do not rinse the interior with water. The residual brine within the shell is the urchin's own saline seasoning. The cook is satisfied when the corail glistens with its natural moisture — deep orange, plump, showing no yellowing or desiccation.

    Serve the opened urchins immediately — within thirty minutes of opening, and sooner where possible. Present each shell on a bed of crushed ice or coarse rock salt to hold it level. Accompany with sliced pain de châtaigne. The cook is satisfied when the first tasting confirms intense oceanic sweetness, iodine-saline depth, and a long marine finish with no bitterness and no ammonia.

    For the pasta variant: cook pasta to the appropriate stage and retain 60 ml of the hot cooking water. Remove the pan from direct heat. Whisk two raw corail segments per portion into the cooking water and olive oil off heat — the roe emulsifies naturally into the liquid, coating the pasta with an oceanic-cream consistency without dairy. The cook is satisfied when the sauce clings to the pasta in a uniform, cream-coloured film carrying the full marine intensity of the raw roe.
