    Toast the breadcrumbs in 2 tbsp olive oil in a wide pan over medium heat, stirring constantly, so the crumbs colour evenly rather than scorching at the edges while the centre stays pale. Remove from the heat and set aside; the mollica may be prepared up to two days ahead and stored in an airtight container. Done when the crumbs are an even amber and smell of toasted grain.

    Bring a large pot of well-salted water to the boil and blanch the broccoli florets for 3 minutes exactly, then lift them out with a slotted spoon and set aside, reserving the blanching water for the pasta, so the pasta will carry the vegetable's starch and mineral flavour into the final sauce. Done when the florets are just tender but hold their shape under light pressure.

    In a wide sauté pan, warm the 80 ml olive oil over medium heat, add the desalted anchovies, and press and turn them with a wooden spoon until they dissolve entirely into the oil, leaving no visible pieces, so the salt and savour spread invisibly through every strand and pocket of the finished dish rather than arriving in sharp, uneven bursts. This is where the dish lives or dies: pull the pan from the heat the moment the last thread of flesh disappears, because anchovy that catches on a dry spot will turn acrid and cannot be corrected. Done when the oil is deeply fragrant and no anchovy flesh remains.

    Add the crushed garlic and crumbled peperoncino with seeds to the anchovy-infused oil and fry over medium heat until the garlic is pale gold, so it sweetens and loses its raw bite without crossing into bitterness that would fight the broccoli. Done when the pan smells fiercely of garlic and dried chilli together.

    Add the blanched broccoli to the pan and sauté over medium-high heat, turning to coat each floret in the aromatic oil, so the edges pick up a little colour and the broccoli draws the anchovy-chilli flavour into itself rather than sitting beside it. Done when the broccoli is heated through and its edges show flecks of gold.

    Cook the pasta in the reserved blanching water until al dente, then ladle roughly 100 ml of the starchy cooking water into the broccoli pan before draining, so the starch binds the oil into a light, clinging sauce rather than a pool of fat at the base of the pan. Add the drained pasta directly and toss over heat until the sauce adheres and no pooled oil remains. Done when the pasta is glossy and the oil no longer separates.

    Plate immediately and scatter the toasted mollica generously over each portion at the point of service — not before, so the crumbs keep their crunch against the warm, moist pasta rather than softening into the sauce. Offer lemon wedges alongside for a squeeze at the table.
