    Begin the rehydration 72 hours before cooking. Submerge the stockfish in a large vessel of cold water; change the water twice daily. After 72 hours the fish should be fully supple. Remove the skin and all bones, keeping the flesh in large chunks — they will shrink by roughly 30% during the braise. If the fish remains in any way stiff, it will not tenderise in the cooking time ahead.

    Warm the olive oil in a wide, heavy-based pot over low heat. Lay the celery stalks and their leaves across the base — they form the Messinese aromatic foundation. Arrange the stockfish chunks in a single layer over the celery. The oil should barely tremble; this is where the dish lives or dies: if the heat is too high the delicate chunks will break, and if the agrodolce additions are not placed now in their correct proportions the dish cannot be corrected later. Distribute the raw potato pieces, olives, capers, pine nuts, raisins, and tomato evenly across and around the fish. The tomato must remain a supporting element only — the stockfish flavour must lead.

    Cover the pot tightly and braise over very low heat for 1.5 hours. Do not stir at any point; swirl the pan gently if redistribution is needed. The potatoes absorb the stockfish cooking liquid and the agrodolce braising juices throughout this time.

    After 1.5 hours, uncover and check the potatoes by pressing gently with the back of a spoon — they should yield completely without resistance, having absorbed the olive-oil-stockfish liquid and collapsed into the braise. The stockfish chunks should be tender and cohesive, not flaked apart. The braising liquid should be reduced, glossy, and fragrant with the agrodolce elements.
