    Wrap each trotter half in a piece of muslin and tie securely with kitchen string. This step is essential: without the muslin, the trotter will disintegrate during the long braise. Place the wrapped trotters in a large, heavy pot with the mirepoix and bouquet garni. Pour over the white wine and enough cold water to cover. The pot is ready when all parcels are fully submerged.

    Bring the liquid to 85 °C — a gentle, steady simmer with only occasional bubbles breaking the surface. This is where the dish lives or dies: do not allow the liquid to boil. A full boil dissolves the gelatin from the trotter into the braising liquid, leaving the flesh collapsed and the skin ragged. Maintain this temperature for 6 to 8 hours. The trotters are done when the bones have softened completely and yield without resistance — they can be eaten along with the meat and skin.

    Lift the muslin parcels from the liquid with great care — the trotters are extremely fragile at this stage. Set them on a tray, still wrapped, and place a second tray on top with a light weight. Cool under this gentle pressure until the gelatin has firmed sufficiently to handle, at least 2 hours. The parcel should hold its shape when pressed lightly with a finger.

    Unwrap the trotters carefully. In a shallow dish, combine the fresh breadcrumbs and minced parsley. Brush each trotter half evenly with Dijon mustard, then roll firmly in the breadcrumb mixture, pressing so the crust adheres on all sides. The surface should be uniformly coated with no bare patches.

    Grill under a salamander or cook in a hot pan with clarified butter for 3 to 4 minutes per side. The crust is done when it is deep golden and shatters audibly at the tap of a fingernail. The interior will be molten and gelatinous. Serve immediately with sauce diable or sauce ravigote alongside.
