    Place the rice in a bowl and cover with warm salted water. Work the grains gently with the fingers, drain, and repeat with fresh warm salted water until the water runs clear. This removes surface starch and is the foundation of separate-grain texture. The water must be visibly clear before proceeding.

    Melt the butter in a heavy-based pot over a moderate flame. For soyulmuş pilav, add the şehriye first and stir continuously until every piece is a deep, even golden-brown — the colour of toasted hazelnuts, the smell distinctly nutty. Only when that colour is achieved add the washed, well-drained rice.

    Add the drained rice to the butter (or butter and browned şehriye). Stir to coat every grain thoroughly in fat before any liquid is introduced. The grains should turn from translucent to faintly opaque, and the pot should hiss quietly. This fat coating is what separates Turkish pilav from a simple boiled rice.

    Pour in the warm stock, season, and bring to a vigorous boil. Reduce immediately to the lowest possible heat, cover tightly, and cook undisturbed until all the stock is absorbed and small steam holes appear across the surface of the rice. The surface should be dry; no liquid should pool at the edges.

    This is where the dish lives or dies. Remove the pot from the heat entirely. Take a completely dry, clean kitchen towel and lay it flat across the full opening of the pot — it must cover without sagging into the rice. Set the lid firmly on top of the cloth. Leave undisturbed for 15–20 minutes. The cloth absorbs the rising steam; condensation cannot drip back onto the rice. A wet cloth, a cloth out of position, or a shortened rest produces wet patches and an uneven texture that cannot be corrected.

    Remove the lid and cloth. Turn the pilav gently with a fork or wide spoon from the edges inward, without pressing or mashing. Each grain should be distinct and dry, yielding to the lightest pressure without collapsing. Serve immediately.
