    Place a terracotta pot over low heat. Pour in the olive oil and add the garlic, peperoncino, and capers. Warm gently until the garlic begins to colour at the edges and the oil is fragrant — do not allow the garlic to brown.

    Lay the cleaned octopus into the pot whole. Scatter the cherry tomatoes over and around them. Tuck the parsley sprig between the bodies. Do not add water or stock of any kind.

    Lay the dampened sheet of parchment paper directly over the surface of the pot, pressing it to the rim, then set the lid firmly on top. This is where the dish lives or dies: the seal must be complete — no steam may escape during the first 40 minutes, for it is that trapped steam, drawn entirely from the octopus's own released liquid, that begins tenderisation and forms the concentrated marine broth that defines this preparation. If the seal is broken early, cooking time extends significantly and the broth is irrecoverably diluted.

    Braise over low heat, undisturbed and fully sealed, for 40 minutes. The correct heat is low enough that only the faintest tremor of liquid is audible within the pot — a steady, muffled bubble rather than a rolling boil.

    Remove the lid and parchment. The octopus should have released a generous, rose-coloured broth. Raise the heat to medium and cook uncovered for a further 10 minutes, allowing the liquid to reduce and concentrate. The sauce is ready when it coats the back of a spoon and has deepened to a rich terracotta-orange, with visible beads of olive oil on the surface.

    Test the octopus for doneness by pressing the thickest part of a tentacle with a finger — it should yield with slight resistance and spring back; tender but bouncy, never collapsing or mealy. If resistance remains, reseal and continue over low heat in 5-minute increments.

    Bring the terracotta pot directly to the table. Allow it to rest 5 minutes before serving — the residual heat continues to concentrate the braising liquid, and the flavour at the bottom of the pot deepens perceptibly during this time. Serve with sliced pane di Altamura alongside for dipping.
