    Combine the yuzu juice, soy sauce, mirin, rice vinegar, and dashi in a non-reactive jar or container. Stir briefly to integrate. The raw mixture will smell sharp and disjointed — this is expected and correct at this stage.

    Add the katsuobushi and the kombu directly to the liquid. Seal the container and refrigerate for a minimum of 24 hours. This is where the dish lives or dies: the maturation period is not optional — freshly assembled ponzu is harsh and its components remain separate; only time allows the citrus, soy, and dashi to integrate into a single harmonious flavour. One week yields a noticeably finer result; one month is the benchmark for serious applications.

    After the maturation period, strain the ponzu through a fine-mesh sieve, discarding the spent katsuobushi and kombu. The finished sauce should pour clear to pale amber, carrying a clean, unified aroma — floral from the yuzu, savoury from the dashi and katsuobushi, with no single element dominating.

    Taste the strained ponzu. The flavour should be bright and acidic yet rounded, with evident umami depth and no raw edge. If the citrus still reads as harsh, the sauce requires further refrigerated maturation; return it to the sealed container and assess again after 48 hours.
