    Make the popiah skin dough. Combine the sifted flour and salt in a bowl. Add the water gradually, working the mixture until a very soft, cohesive, almost batter-like dough forms — it must hold together when lifted but feel considerably wetter than a bread dough. Work the dough vigorously by hand for several minutes until it is smooth and elastic. Rest, covered, for at least 30 minutes. The dough is ready when it holds a continuous film as it is slowly stretched between the hands.

    Cook the popiah skins. Heat a flat griddle or non-stick pan over a moderate flame until evenly hot. Take the ball of soft dough and press it firmly against the griddle surface, rotating it in a continuous circular motion so that it deposits an extremely thin, even film of dough across a 20–25 cm diameter. Immediately lift the dough ball away. Allow the skin to set for a few seconds until the edges lift and the surface loses its raw sheen, then peel it cleanly from the griddle. This is where the dish lives or dies: if the motion is too slow, the dough tears; if the griddle is too cool, no film deposits; if too hot, the skin scorches before it sets. The cooked skin should be paper-thin, completely smooth, and pliable — not dry, not sticky.

    Prepare the prawn and pork broth. Fry prawn shells and pork scraps in a pot until fragrant. Add water to cover generously and simmer until a flavourful broth results. Strain. The broth is ready when it carries a distinct savoury depth on the palate.

    Cook the jicama filling. Add the julienned jicama to the prawn and pork broth in a wide pot along with the sliced or minced pork. Stew over a moderate flame, stirring occasionally, until the jicama is very soft and the liquid has mostly evaporated and coats the filling as a concentrated, glossy residue. The filling is done when a chopstick meets no resistance in the jicama and the pot bottom is nearly dry.

    Prepare all accompaniments. Sauté the prawns until just cooked through and pink. Cook the beaten eggs as a thin omelette; slice into strips. Blanch the beansprouts briefly in boiling water; drain. Fry the shallots until golden and crisp; drain on paper. Fry the minced garlic until crisp and golden. Arrange all accompaniments and condiments — hoisin sauce, sweet bean paste, crispy garlic, fresh chilli — in separate dishes on the table. Each component should be at room temperature or warm; the cucumber and coriander remain cold and raw.

    Assemble at the table. Lay a popiah skin flat. Spread a thin line of hoisin sauce and, if desired, sweet bean paste along the centre. Spoon a portion of the jicama filling over the sauces. Layer accompaniments — prawn, omelette strips, sausage slices, beansprouts, cucumber, coriander — then scatter fried shallots and crispy garlic over all, and add chilli to taste. Fold the left and right sides of the skin inward over the filling, then roll firmly from the bottom upward into a tight cylinder. The roll is correctly assembled when it holds its shape without splitting and the skin remains supple, not torn.
