    Blend the cold chicken breast with the egg white in a food processor until a smooth paste forms. Pass the paste through a fine tamis (drum sieve) into a bowl set over ice, discarding any fibre or lump that will not pass. The purée must be entirely smooth — any visible fibre in the sieve is proof the work is done.

    Set the bowl of purée over a larger bowl packed with ice. Beat in the cold double cream in three additions, working each addition fully into the paste before adding the next. Season with salt, white pepper, and nutmeg, then fold in the diced black truffle (or pistachios and tarragon). Refrigerate the mousseline until it is cold, cohesive, and firm enough to hold its shape on a spoon — this is where the dish lives or dies: a warm or slack mousseline will not hold during roasting, will leak from the cavity, and cannot form the cross-section that defines the dish.

    Heat the oven to 200 °C. Spoon the mousseline into the poularde's cavity, filling it to two-thirds only — the mousseline swells during cooking and will burst the skin if the cavity is overfilled. Truss the bird securely: tie the legs tight against the stuffed cavity opening to prevent leakage, and tuck the wings. Rub the breast evenly with softened butter. The bird should feel firm and compact when pressed at the cavity end.

    Roast at 200 °C for 20 minutes until the breast skin begins to colour and blister at the edges, then reduce the oven to 180 °C and continue for 50–60 minutes, basting every 10 minutes with the pan juices. Total roasting time is approximately 25 minutes per 500 g. The skin should be a deep, even gold with no pale patches at the thigh joint.

    Test for doneness with a probe thermometer: the thigh must read 72 °C and the centre of the mousseline stuffing must read 68 °C. A cold centre in a protein-enriched stuffing is a food safety failure. When both targets are met, remove the bird from the oven.

    Rest the poularde breast-side down for 15 minutes. Meanwhile, pour the excess fat from the roasting pan, set the pan over the heat, and deglaze with the chicken stock, scraping up all sediment. Add the Madeira and reduce briefly until the jus is glossy and concentrated on the spoon.

    Carve at the table. Remove the legs first, then slice the breast on the bias — not perpendicular to the bone. Each bias slice reveals the mousseline filling in cross-section, the pale forcemeat ringed with dark truffle against the golden breast meat. This cross-section is the mark of the dish; a parallel cut buries it. Serve with the jus passed separately.
