    Verify the mousseline: it must be very cold, correctly seasoned (confirmed by the cooked test described in Entry 55), and of a consistency that holds a loose shape without spreading. Refrigerate if any doubt remains. A quenelle is only as good as the mousseline it begins with — no subsequent technique compensates for a broken or under-seasoned base.

    Bring the poaching liquid to 80–85 °C in a wide, shallow pan — a gentle, visible simmer with occasional bubbles breaking the surface. Maintain this temperature throughout. Boiling water tears the quenelle's surface and causes it to disintegrate before the exterior can set.

    Dip both tablespoons into the simmering poaching liquid. Scoop a generous tablespoon of cold mousseline onto the first spoon. Use the second spoon to smooth the top of the mousseline in a single arc, pressing down and rotating — transferring the mass from one spoon to the other. Each pass adds one side of the characteristic three-sided oval and compresses the mass slightly. Three passes is the target: too few produces a rough, asymmetric shape; too many warms the mousseline from hand contact and collapses its structure. This shaping transition between the two spoons is where the dish lives or dies.

    Slide the shaped quenelle directly from the spoon into the simmering liquid. Work in batches that do not crowd the pan. The quenelles will initially sink slightly. Over 8–12 minutes they will expand noticeably — doubling or nearly doubling in volume as the air cells expand and the proteins set around them. The surface becomes smooth and slightly taut. The quenelle is ready when it floats to the surface.

    Confirm doneness with the press test: touch the back of a spoon gently to the surface of a floating quenelle. It should give noticeably under pressure and spring back completely when the spoon is removed. No spring-back indicates overcooking or insufficient fat in the mousseline. Resistance without give indicates the same faults on the opposite extreme.

    Remove the quenelles with a slotted spoon and plate immediately, or transfer to cold water and refrigerate for up to 4 hours. To serve from hold, return to simmering liquid for 2 minutes. Plate ivory-white, smooth-surfaced, with three distinct sides visible. Nap with sauce Nantua and serve at once. The cross-section should show a uniformly pale, very fine, open texture — like a just-set mousse, not dense, not grainy, not hollow.
