    Bring the milk to a full boil in a heavy pot over medium-high heat, stirring continuously so the milk does not scorch on the base and develop an off flavour. Remove from the heat and add the lemon juice gradually, stirring gently, until the milk splits completely into green-tinged whey and white curds — gradual addition gives you control over the split so the curds stay tender rather than turning rubbery from excess acid. The split is complete when the whey runs clear and green; do not add vinegar, as its residual flavour carries through into the finished balls.

    Line a colander with muslin and pour in the split milk, then gather the cloth and hold it under cold running water for one minute so that all residual acid is washed away, preventing a sour taste in the finished chhena. Hang the bundle and allow to drain for 30 minutes, then press to remove excess moisture. The chhena should be firm enough to hold a shape but not crumbly — it should feel damp, not wet.

    Turn the chhena onto a clean surface and knead continuously for 20–25 minutes using the heel of the hand, smearing and folding, so that the fat is worked back uniformly into the mass and the surface becomes as smooth as soft modelling clay with no fat granules detectable under the palm — this is where the dish lives or dies: under-kneading leaves fat pockets that prevent uniform expansion and cause the balls to crack in the syrup. If using semolina or flour for the Odia style, knead it in at this stage.

    Divide the kneaded chhena into equal portions of approximately 20 g each, so that every ball spends the same time in the syrup and comes out evenly cooked. Roll each portion between the palms into a perfectly smooth sphere, pressing out any surface cracks that would split open under the heat of the boiling syrup. Set aside on a plate.

    Combine the sugar and water in a wide, deep pot and bring to a rolling boil over high heat. Drop the chhena spheres into the boiling syrup — the pot must be at a vigorous, agitated boil rather than a simmer when the balls enter, so they seize and hold their shape immediately rather than dissolving at the surface. Cover at once with a tight-fitting lid and maintain the rolling boil for 10 minutes; the unbroken sound of active bubbling against the lid tells you the steam pressure inside is driving the balls to expand from within.

    After 10 minutes, remove the lid — the rasgulla should have roughly doubled in size and be floating — then continue to cook uncovered at a rolling boil for a further 8–10 minutes so that the syrup penetrates fully to the centre of each ball. Remove one rasgulla and press it gently between a wet finger and thumb: it should spring back immediately and completely to its original shape, confirming that the interior is set and has absorbed syrup throughout.

    Remove the pot from the heat, add the rose water to the syrup, and stir gently. Allow the rasgulla to cool in the syrup so they continue drawing it inward as the temperature falls, then transfer to a container and refrigerate. Serve chilled, swimming in their syrup — press a rasgulla against the mouth and it should release a rush of cold, rose-scented syrup from its interior.
