    Drain the soaked cannellini beans and cover with fresh cold water. Simmer with one garlic clove, the rosemary sprig, and the Parmigiano rind for 60–90 minutes, until the beans are completely tender throughout and their skins offer no resistance. Reserve all cooking liquid. Discard the rosemary and garlic.

    Warm the olive oil in a large heavy pot over a medium flame. Add the onion, celery, and carrot and cook the soffritto slowly for 15–20 minutes, until the vegetables are thoroughly softened and the onion is translucent without colouration.

    Add the remaining garlic clove and stir for one minute. Add the torn cavolo nero leaves in batches, turning them through the soffritto until each batch wilts and collapses enough to accommodate the next. The leaves should be fully wilted and darkened but must retain visible structure and a perceptible bitter edge — this is the point to stop.

    Add the cooked cannellini beans together with all their reserved cooking liquid. Add water to bring the total liquid level to a generous broth. Add the Parmigiano rind. Simmer uncovered for 30 minutes, allowing the bean starch and the rind to enrich the broth. Do not blend any part of the soup. The beans must remain whole.

    This is where the dish lives or dies. Remove the pot from the heat. Press the stale pane sciocco slices evenly into the hot soup — do not stir — allowing the bread to sit on and just below the surface, absorbing the broth without being broken up. Leave uncovered until the pot reaches room temperature, then cover and refrigerate overnight. By morning the bread will have drunk the liquid and transformed the soup into a dense, porridge-like mass.

    The following day, return the pot to a high flame and bring the ribollita to a vigorous boil, stirring with a wooden spoon to incorporate the swollen bread into the body of the soup. Reduce immediately to a steady simmer and cook for 10–15 minutes, during which the remaining starch in both bread and beans activates further and the soup thickens visibly on the spoon.

    Season with salt now, and only now. Taste and adjust. Ladle into warmed bowls and finish each portion with a generous pour of raw extra-virgin olive oil over the surface. The oil should pool briefly before being drawn into the dense mass — this is the correct texture for service.
