    Submerge the sweetbreads in very cold water with the salt and white wine vinegar or lemon juice. Refrigerate for 3–6 hours, changing the water 2–3 times. At the end of soaking the water should run pale — nearly clear — with no trace of blood remaining.

    Place the soaked sweetbreads in cold, salted water and bring slowly to a gentle simmer. Cook for 3–5 minutes; begin checking at 2 minutes by pressing gently with a finger. This is where the dish lives or dies: the exterior must have just set to a firm, ivory surface while the interior remains slightly soft and yielding to pressure. The colour throughout should be pale cream to ivory — not translucent-raw, not grey. Over-blanching produces a tough, dense sweetbread that no subsequent step can recover; the window between correct and over-cooked is approximately two minutes.

    Transfer immediately to ice water. Leave until completely cold throughout.

    When cold, remove the outer membrane and all connective tissue, fat, and blood vessels with a small paring knife and the fingers. Work carefully — the tissue tears easily. The cleaned sweetbread should present a smooth, uniform surface of pale cream flesh.

    Place the cleaned sweetbreads between two flat plates with a 500 g weight on top. Refrigerate for a minimum of 1–2 hours. When correctly pressed, the sweetbread should feel firm, slightly dense, and uniform in thickness under the hand. If it feels soft and irregular, return it to the refrigerator under heavier weight for another hour.

    Dry the pressed sweetbreads thoroughly with a clean cloth. Season on all sides. Set a heavy pan over high heat and add the clarified butter; wait until the butter is just beginning to colour. The sweetbread should make an immediate, aggressive, sustained sizzle on contact with the pan — a tentative or slowly building sound indicates insufficient temperature, and the sweetbread will absorb fat rather than sear. Cook for 3–4 minutes per side until the crust is the colour of dark honey, uniform across the entire surface of contact. Press gently with a spatula at the 3-minute mark: it should feel firm with a slight give, like a correctly cooked scallop.

    Rest briefly, then slice each sweetbread into portions of 8–10 mm — each slice displaying the full cross-section of the compressed disc. Serve immediately; the crust softens quickly.
