Heat olive oil in a heavy-bottomed risotto pot over medium heat; add onion and sauté 3 minutes until translucent; add garlic and cook 1 minute.

Add rice and stir constantly 2 minutes, coating grains with oil, until edges become translucent.

Pour in white wine and stir until nearly absorbed; begin adding stock one ladle at a time, stirring frequently, waiting until liquid is mostly absorbed before adding the next ladle (approximately 18 minutes total).

When rice is tender but still al dente, remove from heat; stir in butter and Parmigiano Reggiano until creamy.
