Roast Veal with Rosemary and Garlic

    Heat the oven to 180°C. Using a sharp, thin-bladed knife, cut incisions 3–4 cm deep at regular intervals across the entire surface of the joint — top, underside, and sides. Into each incision press a sliver of garlic, a small rosemary sprig, and, if using, a strip of pancetta. The incisions will close around the aromatics as the meat contracts; they are sealed inside. Season the exterior with salt. If the roast carries no fat cap, smear the surface generously with olive oil or tie pancetta strips over it. Set the joint fat-side up on a rack in a roasting pan.

    Place in the oven and roast at 180°C throughout — the steady, moderate temperature is deliberate. Every 15–20 minutes, baste the roast with the juices that collect in the pan. If at any point the pan juices begin to darken before the roast is done, add a small pour of white wine to prevent burning.

    This is where the dish lives or dies. Insert a meat thermometer into the thickest point of the roast, away from bone or aromatic inclusions. Pull the roast from the oven when the internal temperature reads 63°C. Tent loosely with foil; carryover cooking will bring it to 65°C during the rest. At 65°C the veal is correctly done. At 70°C it is acceptable. At 75°C it is grey, dry, and a failure — there is no recovery from overcooked veal.

    Rest the joint for a minimum of 15 minutes. When carved, the juices released should be pale pink — not red, not colourless. The interior of each slice should show pale pink flesh with small dark inclusions of rosemary and garlic visible throughout.

    While the joint rests, set the roasting pan over a medium flame. Deglaze with dry white wine, scraping every caramelised fond from the base. Reduce by half. Do not thicken. Pour through a fine sieve and serve alongside. The sauce is ready when it is reduced by half and carries a clean, bright acidity.
