Heat the oven to 180 °C. Season the tied veal loin and set it in a roasting pan. Roast for 50–60 minutes, basting with butter every 10 minutes. The dish is done when a probe reads 65 °C at the centre and the meat shows a blush-pink flush — not rare, not grey.

Transfer the veal to a rack and rest uncovered for 15 minutes. The juices must be reabsorbed before the knife touches the meat; slicing too early tears the slices and loses moisture the dish cannot recover.

While the veal roasts, prepare the soubise. Sweat the sliced onions in 40 g butter with a pinch of sugar over low heat for 30 minutes. No colour must develop — the onions should be fully melting and translucent. Add the 200 ml béchamel, simmer 10 minutes, then purée until silk-smooth. The finished soubise coats a spoon in a pale, uniform cream.

Prepare the duxelles. Sauté the shallots in butter until softened, add the squeezed mushrooms, and cook over high heat, stirring constantly, until every trace of moisture has evaporated. This is where the dish lives or dies: wet duxelles will dissolve the reassembled structure, causing the slices to slide apart under the Mornay and salamander. The mixture must be bone-dry, granular, and dark — it pulls cleanly from the pan.

Prepare the Sauce Mornay. Stir the egg yolks and the greater part of the grated Gruyère into the hot béchamel off direct heat. The sauce should be glossy, thick enough to nap a spoon, and hold its shape when spooned.

Carve the rested veal into slices of 1 cm, keeping them strictly in sequence. Spread a layer of soubise across the base of a heatproof platter. Reassemble the roast in its original form, inserting a generous spoonful of duxelles between each slice. Press gently to reform the joint shape. Optionally, tie with string to secure the structure.

Nap the entire reassembled roast evenly with Sauce Mornay — the coat should be thorough but not thick. Sprinkle the reserved grated Gruyère over the surface. Gratinée under a salamander at 280 °C until the surface is golden and bubbling. Move quickly: the veal is already cooked, and prolonged heat past this point will dry it past recovery. The crust should be uniformly coloured within 3–5 minutes.

Bring the platter directly to the table. Carve at the table, removing string if used — each slice presents its own seam of duxelles, held in the golden Mornay casing.
