    Lay each beef slice flat on a board. Season lightly with salt and pepper. Spread a thin, even layer of mustard across the entire surface of each slice. Lay 2 rashers of bacon over the mustard, then distribute sliced onion evenly over the bacon. Place one cornichon at the near edge. Roll each slice tightly around the filling, beginning at the cornichon end, and secure firmly with kitchen twine or wooden toothpicks — the roll must hold a tight, uniform cylinder. The rolls are ready when they are compact and will not unravel when pressed gently.

    Heat the oil in a heavy-based casserole or Dutch oven over high heat until shimmering. Sear the Rouladen in a single layer, turning on all sides, until a deep mahogany-brown crust forms on every surface — this is where the dish lives or dies: pale, grey rolls yield a flat, lifeless braising liquid, while aggressive Maillard browning produces the caramelised fond that is the foundation of the sauce. Work in batches if necessary; do not crowd the pan. Remove the browned rolls and set aside.

    Pour the red wine into the hot casserole and scrape all caramelised solids from the base. Reduce the wine over high heat until halved in volume — the liquid should smell concentrated and no longer sharply alcoholic, approximately 3–4 minutes.

    Return the Rouladen to the casserole. Add the dark beef stock until the rolls are at least two-thirds submerged. Bring to a gentle simmer, cover tightly, and transfer to an oven preheated to 160 °C, or maintain a steady low simmer on the stovetop. Braise for 1.5 to 2 hours. The rolls are done when a skewer meets no resistance passing through the thickest part and the beef feels fully yielding.

    Remove the Rouladen and set aside, covered. Strain the braising liquid through a fine sieve into a saucepan, discarding the solids. Reduce over medium-high heat until the sauce coats the back of a spoon. Stir in the cream and the finishing mustard; simmer for 2 minutes. Taste and adjust salt. The sauce is ready when it holds a clean line drawn across the spoon.

    Remove twine or toothpicks from the Rouladen. Return the rolls to the sauce and reheat gently until the beef is hot through. Serve with Rotkohl and Kartoffelklöße, spooning the sauce generously over each roll.
