    Wash the dandelion greens in several changes of cold water, lifting them clear of the grit that settles. Spin completely dry. Place in a warm salad bowl. The leaves must be entirely free of surface moisture, or the dressing will be diluted.

    Place a heavy pan over moderate heat. Add the lardons fumés and render them slowly, without hurrying, until each piece is golden and crisp and the fat has fully run. The lardons should be uniformly coloured, not pale and yielding.

    Add the finely sliced shallot to the rendered fat in the pan and cook briefly until softened. Then pour the red wine vinegar directly into the hot pan. This is where the dish lives or dies: the deglaze must be immediate and the pan hot enough to produce the characteristic sizzle and cloud of sharp, smoky vapour — a cool pan means a cool dressing, and a cool dressing will not wilt the greens or balance their bitterness.

    Remove the pan from the heat. Whisk in the Dijon mustard until the dressing is briefly emulsified. The fat, vinegar, shallot, mustard, and crisp lardons together form the complete dressing.

    Pour the hot dressing immediately over the dandelion greens in the warm bowl and toss rapidly. The greens should wilt just slightly at their edges while retaining their structure — tender and barely subdued, not collapsed.

    If using, place one poached egg (yolk still runny) atop each portion, or distribute hard-boiled egg quarters or diced Gruyère. Serve at once. The salad does not hold: the greens continue to wilt and the lardons lose their crispness within minutes.
