    Combine joshinko and shiratamako in a bowl. Add hot water gradually, mixing with a spatula and then kneading by hand until the dough is smooth, cohesive, and entirely without lumps. A rough dough will produce cracked surfaces on the finished dango.

    Divide the dough into three equal portions. Leave the first portion plain (white). Knead yomogi powder or matcha into the second until the colour is even and a pale, earthy green throughout. Knead sakura or strawberry colouring into the third until the tone is a delicate, pale blush — colour should read as natural, not garish. This is where the dish lives or dies: the balance of the two flours and the restraint of the colouring determine both the structural chew and the seasonal legibility of the confection; joshinko gives firmness, shiratamako gives elasticity, and neither colour may overwhelm.

    Roll each portion into four balls of equal size. Place all twelve balls in a steamer lined with damp muslin or parchment, spaced so they do not touch. Steam over briskly boiling water until the dango are set and translucent at the surface but not collapsed or mushy — overcooking destroys the mochi chew. Remove promptly.

    Allow the dango to cool slightly until handleable but still at room temperature. Press one gently with a fingertip: it must bounce back fully — the 'mochi-mochi' quality that is the texture standard. A dango that does not spring back has been oversteamed.

    Thread three dango onto each bamboo skewer in fixed order: green at the base, white in the middle, pink at the tip. The sequence encodes the seasonal progression — earth's green, winter's snow, the sakura bloom — and must not be inverted. Serve at room temperature, the same day.
