Heat the wok over high heat until smoking. Add 30 g lard, then the minced garlic and ginger, and stir-fry for 30 seconds until fragrant — the smell shifts from raw to toasted, telling you the aromatics have released what they hold and are ready to carry the miso.

Add the red and white miso to the wok and press them into the hot lard, stir-frying continuously and turning the paste against the wok surface for 60–90 seconds so the sugars in the miso toast and colour rather than simply warming through — the paste darkens by one shade, pulls slightly from the wok surface, and the raw fermented edge gives way to a roasted, nutty depth. This is where the dish lives or dies. Deglaze immediately with sake, stirring to integrate; the tare is done when the alcohol smell dissipates and the pan is cohesive.

Bring the pork-chicken broth to a vigorous simmer, then ladle approximately 375 ml per portion into each bowl and add a measured portion of the miso tare, stirring to combine so the tare disperses evenly rather than sitting as a dense pocket at the bottom. The broth should remain opaque and robust — taste it: the bowl should be savoury, warming, and full-bodied without being salt-sharp.

Cook the ramen noodles according to their specification in well-salted boiling water. Drain and divide among the four bowls.

Return the wok to high heat with the remaining 30 g lard and add the pork mince, stir-frying until coloured, then add the bean sprouts, keeping the wok fiercely hot throughout so the sprouts retain their crunch and take on a light char at the edges rather than steaming and going limp. A visible blister on some sprouts confirms the correct heat.

Divide the wok-fried pork and bean sprouts over each bowl, then arrange the bamboo shoots and corn kernels alongside. Place one cold knob of butter (置きバター) directly on top of the hot broth — it should begin to melt on contact but not vanish instantly, so that each diner receives it still visibly pooling and enriching the surface as the bowl arrives — then finish with a drizzle of sesame oil and serve immediately.
