    Combine the white miso, red miso, mirin, sake, and sesame oil in a bowl. Stir until fully incorporated. Transfer to a sealed container and refrigerate until needed. The tare is ready when the ingredients have merged into a uniform, aromatic paste with no visible separation.

    Combine the pork stock and chicken stock in a pot and bring to a gentle simmer over medium heat. The broth must remain translucent and lightly steaming — not boiled to the opacity of tonkotsu. Hold at a bare simmer throughout service.

    In a wok over high heat, stir-fry the bean sprouts and cabbage in a small amount of oil until the edges take on a light char and the vegetables soften slightly but retain structure — this is the ita-su technique. The wok-char aroma signals the moment to remove from heat and add the vegetables directly to the broth.

    Cook the noodles in a separate pot of boiling unsalted water according to their specification. Wavy noodles are done when they yield at the centre with a faint resistance at the bite — not fully soft. Drain immediately.

    This is where the dish lives or dies. For each bowl, measure 3 tablespoons of miso tare into a ladle. Add one ladle of hot broth to the tare in the ladle and stir until the miso is fully dissolved with no lumps remaining. Pour this diluted tare into the serving bowl first, then ladle the full hot broth over it. The bowl must be assembled in this order — miso dissolved in broth before the broth is added, never miso dropped directly into the bowl — to prevent lumping and ensure uniform seasoning throughout.

    Add the drained noodles to the seasoned broth. Arrange chashu, corn, menma, nori, spring onion, and ita-su vegetables over the noodles. The surface of the broth should be richly coloured and aromatic; the toppings should sit proud of the liquid. Place one pat of butter at the bowl's edge if using — it is set there to melt gradually from the bowl's residual heat, not stirred in at the kitchen.
