Method

  1. 1
Heat the oven to 180 °C and lightly oil a baking dish large enough to hold the sardines in a single, tight layer. Prepare the sardines: gut each fish, draw out the spine while keeping the two fillets joined at the tail, and open the fish flat like a book. The flesh should be translucent, the smell clean and of the sea — any sourness means the fish is unfit for this dish.
  2. 2
Toast the breadcrumbs in a wide pan with the olive oil over a medium flame, stirring constantly, until every crumb is an even deep gold — the toasting drives off moisture so the filling stays distinct inside each roll rather than turning to paste in the oven. Remove from the heat and allow to cool slightly before combining with the pine nuts, drained currants, chopped parsley, orange zest, and the 2 tablespoons of orange juice. The mixture should hold together when pressed but remain loose enough to spoon; adjust with a few drops of oil if necessary.
  3. 3
Lay each opened sardine skin-side down and place a generous spoonful of filling across the wider, head end of each fish. This is where the dish lives or dies: roll each sardine firmly from head toward tail so the tail fin fans upward and the roll is compact enough to stay closed without a skewer, because a loose roll will open in the oven and the filling will spill out and scorch on the dish floor. Work methodically — a tight, even pressure along the length of the fish is what keeps the roll intact.
  4. 4
Arrange the rolled sardines tightly, upright and tail-up, in the oiled dish, alternating each roll with a bay leaf so that every sardine is flanked by aromatic leaves — the pressure of neighbours on all sides is what prevents the rolls from splaying open during baking. The dish should be genuinely full, the rolls supporting one another. Drizzle the remaining 3 tablespoons of orange juice and a thread of olive oil evenly over the top.
  5. 5
Bake at 180 °C for 15–20 minutes; the sardines are done when the exposed breadcrumb filling has deepened to a rich amber and the fish flesh at the base of each roll is just opaque throughout. Press one roll gently with a fingertip: it should feel firm but not hard, because a few minutes past that point the flesh tightens and turns chalky with no recovery. Remove from the oven immediately — sardines dry within minutes of their moment.
  6. 6
Rest the dish uncovered until it reaches room temperature before serving, because the orange, currant, and toasted breadcrumb notes need time to settle and resolve into a single harmonious whole rather than arriving as separate, competing impressions on the palate. The bay leaves remain in the dish as aromatic markers, not for eating. Taste a small piece of filling to confirm the balance of sweet, savoury, and citrus before bringing the dish to the table.
