    Dredge the cleaned, dried sardines in plain flour, shaking off any excess. Heat 250 ml of olive oil in a wide pan to 175 °C. Fry the sardines in batches — do not crowd the pan — turning once, until both sides are golden and the surface is crisp. The oil must be fully up to temperature before the fish enters: a sardine dropped into oil that is not hot enough will absorb fat and emerge soft rather than golden.

    Lift the fried sardines onto a rack or paper, then arrange them in a single even layer — or in close-fitting layers — inside a glass or ceramic container with a lid. Do not use a metal vessel. The sardines should lie flat.

    Warm 4 tbsp olive oil in a wide, heavy pan over the lowest possible heat. Add the thinly sliced white onions and a pinch of salt. Cook, stirring occasionally, for 30–40 minutes without allowing the onions to colour. They are ready when they are completely collapsed, translucent, and sweet to the taste — no raw or sharp edge should remain.

    Raise the heat to medium. Pour in the white wine vinegar and reduce by half, stirring. The sharp acidic edge of raw vinegar should give way to a rounder, integrated sweet-sour aroma that rises clearly from the pan.

    This is the step on which the dish lives or dies. Off the heat, stir the drained raisins, toasted pine nuts, and the cinnamon stick (if using) into the warm saor. The sauce must be poured over the sardines while still warm — not hot enough to continue cooking them, but warm enough to begin the aromatic exchange that will define the preparation after marinating. Pour the saor evenly over every layer of sardines, ensuring all surfaces are in contact with the sauce. The sardines must be completely submerged or covered.

    Allow the dish to cool to room temperature uncovered. Cover with a lid or film and refrigerate for a minimum of 24 hours; 48 hours is the traditional measure. The raisins will have plumped further in the sauce; the sardine flesh will have absorbed the sweet-sour liquid and taken on a deeper, unified character that is unmistakably saor.

    Remove from the refrigerator 30–45 minutes before serving. Sarde in saor are served at room temperature, on crostini or as a cicchetto. The flesh should be yielding and fully impregnated with the saor; any cold stiffness from the refrigerator should have relaxed before the dish reaches the table.
