    Slice the veal topside to 5 mm. Lay each slice between sheets of cling film and pound with a meat mallet to a uniform 3 mm. Season both faces with salt and white pepper. Spread the flour on a flat plate. Dredge each escalope in the flour, shaking off all excess so only a thin veil remains — the escalope should not look coated. The test: run a finger across the surface; it should feel barely chalky, not powdery.

    Set a wide, heavy-based skillet — large enough to hold the escalopes without crowding, or work in two batches — over high heat. Add the olive oil and frying butter together. When the foam subsides and the butter turns a pale gold at the edges, the pan is ready. The test: a pinch of flour dropped in should sizzle immediately.

    Lay the escalopes in the pan. Cook 90 seconds per side without moving them. The crust should be a deep, even gold and the meat just cooked through — the total cooking time must not exceed 3 minutes or the veal will dry. Remove to a warm plate. The test: the surface is golden-amber and lifts cleanly from the pan.

    This is where the dish lives or dies. With the pan still over high heat, pour in the lemon juice and white wine together. Scrape up every fragment of browned fond with a wooden spoon. The liquid will bubble violently and reduce in approximately 60 seconds; the flour carried by the meat and the pan fond will naturally emulsify the sauce into a light, clear gloss. Do not add the lemon at any earlier stage — it suppresses browning and destroys the fond. The test: the sauce coats a spoon in a thin, translucent film — not cloudy, not watery.

    Remove the pan from the heat. Add the cold butter pieces and the lemon zest. Swirl the pan continuously — do not stir with a spoon — until every piece of butter is absorbed and the sauce is glossy and lightly thickened. The test: the sauce moves as a single, cohesive body when the pan is tilted.

    Return the escalopes to the pan for no more than 20 seconds to coat and warm through. Plate immediately — the sauce separates and loses its gloss within 5 minutes of standing. The test: the sauce clings to the veal surface without pooling.
