    Set a dry wok or heavy frying pan over a low-to-medium flame. Add the shallot and garlic and stir continuously until softened and pale gold — the smell shifts from raw and sharp to sweet and mellow.

    Add the ground cumin and coriander directly to the dry pan. Stir for no more than thirty seconds until the spices bloom and a warm, earthy fragrance rises.

    Add the grated coconut. Stir without pause, spreading it across the pan with each pass so every strand contacts the heat evenly. This is where the dish lives or dies: the coconut must be kept moving at all times — a single moment of inattention scorches it irreparably, and no sweetening can rescue a bitter batch.

    Drizzle in the dissolved tamarind water and add the palm sugar. Continue stirring over low heat, working the moisture out of the pan until no liquid is visible and the coconut begins to separate into individual dry strands.
