    Pat the carp thoroughly dry on both sides. With a sharp knife, cut deep diagonal scores through the skin and flesh at intervals of roughly 2 cm along both flanks, cutting close to the bone. The cuts must be deep enough to open visibly when the fish is lifted — this is the only means by which the braising liquid will penetrate the thick skin.

    Heat the oil in a wok or wide pan over high heat until the surface shimmers and a drop of water vanishes on contact. Lay the carp in carefully. Fry undisturbed until the underside is a deep, even gold and releases freely from the surface without tearing. Turn and repeat on the second side. The Maillard crust formed here is essential to Lu Cuisine fish preparation; a pale, soft exterior at this stage cannot be corrected by the braise.

    This is the step on which the dish lives or dies. Pour off excess oil, leaving a thin film. Add the ginger slices, spring onion sections, and whole garlic cloves directly to the pan around the fish. Add the Shaoxing wine, soy sauce, Zhenjiang black vinegar, and sugar. Add the soaked mushrooms if using. Pour in just enough water to reach the lower third of the fish — approximately 200–250 ml. The vinegar must be present in sufficient quantity to register clearly at this stage: Shandong braising is more acidic than other regional fish preparations.

    Bring to a vigorous boil, then reduce to a steady simmer. Baste the fish repeatedly with the braising liquid throughout cooking, working the sauce into the scored flesh. Turn the fish once, with care, at the midpoint. The garlic cloves are done when they yield without resistance to a spoon and have turned sweet and creamy throughout their interior.

    Raise the heat to reduce the sauce, continuing to baste. The dish is ready when the sauce has thickened sufficiently to coat the back of a spoon in a glossy, lacquer-like film and clings to the scored flesh rather than pooling beneath the fish. An under-reduced sauce is a common failure; the glaze should be thick, sweet-sour, and savoury in balance.

    Transfer the whole fish to a serving platter. Spoon any remaining sauce over the fish. Present the fish with the head directed toward the guest of honour — the Shandong serving tradition denoting the highest respect.
