Place the dried sea cucumbers in a pot of cold water. Bring to a gentle boil, then remove from the heat and allow to cool completely in the water. Drain, transfer to fresh cold water, and refrigerate. Change the soaking water 2–3 times daily. Repeat the boil-cool-soak cycle 4–5 times over 3–5 days. The sea cucumbers are ready when they are fully pliable and have swelled to several times their dried size, with no firm or rubbery core. At no point during rehydration should oil come into contact with the cucumbers — fat prevents proper water absorption. The test: the cucumber yields completely to gentle finger pressure, with no resistance at the centre.

Once fully rehydrated, blanch the sea cucumbers in a pot of fresh boiling water. Drain immediately. Repeat the blanch 2–3 times, each time in fresh water. This step purges residual sea-born odour. Do not prolong the boiling — extended heat at this stage destroys the delicate cell structure. The test: the cooking water runs clean and the sea cucumber carries no pronounced marine smell.

Heat the neutral oil in a wok over a medium flame. Add the whole scallion stalks and deep-fry until they are golden and completely softened, their moisture expelled and their fragrance fully transferred to the oil. Remove and discard the scallion stalks. The test: the oil is visibly golden and carries a deep, sweet-savoury scallion aroma with no raw green note.

This is where the dish lives or dies. Add the blanched sea cucumbers whole to the scallion-infused oil in the wok. Pour in the superior stock, oyster sauce, and Shaoxing wine. Bring to a simmer and braise over a moderate flame, basting and turning the sea cucumbers regularly, until the liquid reduces to a thick, glossy sauce that coats each cucumber in an even, lacquered film. Insufficient time at this stage means the cucumber will not absorb the savoury broth. The test: the braising liquid coats a spoon cleanly and the sea cucumbers are deeply coloured and glossed on all sides.

Transfer each sea cucumber whole to the serving plate — do not slice. Spoon the remaining reduced sauce over them. Serve immediately. The test: each piece holds its form, gleams with the reduced braise, and yields to the slightest pressure, with no structural resistance.
