    Set a wide, heavy-based pan over a high heat. Add the minced lamb in batches and brown thoroughly, breaking up any clumps. Drain excess rendered fat, leaving a thin film in the pan. The mince should be deeply coloured, not grey — this is the foundation of the filling's flavour.

    Reduce the heat to medium. Add the chopped onion and diced carrot to the pan and cook in the residual fat until the onion is soft and translucent. Pour in the red wine and cook, stirring, until the pan is dry and no sharp wine aroma remains — the wine must be fully reduced before any stock is added.

    Add the Worcestershire sauce and the stock. Stir to combine, scraping any residue from the base of the pan. Bring to a simmer, then reduce the heat and cook, uncovered, for 15–20 minutes. This is where the dish lives or dies: the filling must be reduced until no visible liquid remains and the mixture holds a mound's shape when pressed — a filling that weeps liquid will cause the potato crust to float, sink unevenly, and become waterlogged during baking.

    Transfer the reduced filling to a deep baking dish and allow it to settle in an even layer. Set aside while the potato crust is prepared.

    Boil the potatoes in salted water until completely tender throughout — a skewer must pass through the centre without resistance. Drain thoroughly and pass through a ricer or sieve. Beat in the butter and cream while the potato is still hot, working until the mash is smooth, generously enriched, and slightly loosened — it must be pipeable but firm enough to hold its shape through baking.

    While the mash is still warm, pipe it over the filling using a piping bag fitted with a large star nozzle, covering the surface completely from edge to edge. The defined ridges created by the nozzle produce individual peaks that will brown separately and give an even, professionally finished top. Alternatively, spread and fork the surface to create a pronounced texture — a smooth, flat surface browns unevenly.

    Brush the entire potato surface with beaten egg yolk or melted butter. Bake in an oven heated to 200 °C until the crust is a genuine golden brown, with slightly crisp, caramelised edges where the piped starch meets the hot dish. Pale shepherd's pie is under-finished — the colour is the cue.
