    Combine the reserved shrimp shells and 500 ml cold water in a small saucepan. Bring to the boil, reduce to a simmer, and cook uncovered for 20 minutes. Strain through a fine sieve, discard the shells, and reserve the stock. The liquid will be faintly pink and carry a clean brine scent — this is correct.

    Heat the oil in a heavy-based saucepan or Dutch oven over medium heat. Add the onion, celery, and green bell pepper — the trinity. Sweat, stirring occasionally, until completely softened and translucent, 10 to 12 minutes. The vegetables must lose all raw firmness and begin to melt together before the garlic is added.

    Add the garlic and stir for 1 minute, until fragrant. Add the crushed tomatoes, bay leaves, thyme, cayenne, and Worcestershire sauce. Stir to combine. The sauce must now cook at a steady, uncovered simmer for a minimum of 30 minutes, stirring occasionally, until it is thick, brick-red, and reduced — a spoon drawn across the base of the pan should leave a clear channel that closes slowly. Thin only if necessary with shell stock, adding it in small increments. Taste and season with salt. This is where the dish lives or dies: the sauce must be fully cooked, concentrated, and seasoned before the shrimp enter; shrimp added to a raw or watery sauce will poach rather than braise, and the finished dish will be thin.

    Bring the finished sauce to a gentle simmer over medium-low heat. Add the peeled shrimp in a single layer. Simmer gently, stirring once or twice, for 3 to 5 minutes. Remove from heat when the shrimp are just pink and curled but still faintly translucent at the very centre — residual heat will carry them through. Overcooked shrimp, opaque throughout and tightly coiled, cannot be corrected.

    Remove and discard the bay leaves. Stir in the cold butter in two or three additions until it is fully absorbed and the sauce takes on a slight sheen. This monter au beurre finish rounds the tomato's acidity and enriches the texture. Taste once more for salt and cayenne.

    Mound steamed long-grain white rice in the centre of each warmed bowl. Ladle the shrimp and sauce over and around the rice, ensuring the sauce pools at the base. Bring hot sauce and French bread to the table separately.
