    Bring a generous volume of water to the boil, dissolve salt into it, and submerge the tofu cubes. Hold at a bare simmer for 15 minutes. The tofu firms slightly and loses its raw, beany aroma. Drain carefully and set aside. The cubes should hold their shape without crumbling.

    Heat the neutral oil in a wok over high heat. Add the beef mince and stir-fry, pressing it against the wok surface, until every grain is separate, dry, and beginning to crisp at the edges. Remove the beef and set aside, leaving the rendered fat in the wok.

    Reduce to medium heat. Add the doubanjiang and fermented black beans to the residual fat, frying and folding continuously for a minimum of 3 minutes. This is where the dish lives or dies: the oil must turn a deep, uniform brick-red and the paste must lose its raw, sharp edge — a pale, under-fried paste yields a flat, characterless sauce that cannot be corrected at any later stage.

    Return the beef to the wok and stir to combine with the paste. Pour in the warm stock and add the dark soy sauce. Bring to a gentle simmer. The sauce should be a glossy, deep red with visible droplets of chili oil rising to the surface.

    Slide the drained tofu cubes gently into the sauce. Do not stir with a spatula; instead, rock the wok or use a wide, flat spoon in slow, sweeping motions to coat the tofu without breaking it. Simmer for 3 to 4 minutes. The tofu absorbs the sauce colour at its edges while remaining pale and cool at its centre.

    Add the cornstarch slurry in two additions, stirring gently between each, until the sauce naps the tofu and flows slowly — neither thin and watery nor stiff and gluey. The test: the sauce should coat the back of a spoon and hold a line drawn through it for two seconds before closing.

    Transfer immediately to a warmed serving bowl. Drizzle the freshly ground Sichuan peppercorn oil over the surface at the moment of service, not before. The tofu should tremble on the chopstick. The ma (numbing) sensation arrives on the palate after the la (heat) — in that sequence, in balance.
