Method

  1. 1
Prepare the clear Joseon court stock (dasima-pyogan), then pass it through fine muslin, repeating the pass as many times as needed until the stock runs completely limpid, so that no suspended particles remain to muddy the colour or dull the clean, sea-edged savour that defines the dish. The stock is ready when it is entirely clear and deeply savoury — any cloudiness at this stage disqualifies the dish aesthetically and the batch must be clarified again before proceeding.
  2. 2
Pre-cook every component individually and season each one before assembly — the thinly sliced beef, the abalone, and the sea cucumber are prepared separately and held warm — so that the broth, once poured, can remain untouched and pristine rather than being asked to carry the seasoning work the components should already have done. The broth must harmonise at the table, not compensate for under-seasoned components.
  3. 3
Prepare the egg jidan by cooking the separated whites and yolks individually in a lightly oiled pan over very low heat, so the sheets stay bright and even in colour without the pale scorch at the edges that would ruin the yellow and white bands in the finished arrangement. The sheets are done when they are fully set and show no browning; cut them immediately into precise diamond shapes of equal size.
  4. 4
Arrange all pre-cooked components in the moat of the sinseollo vessel in concentric bands following the five-colour (오방색) principle — white, yellow, black, green, and red each in their designated position — so that the ceremonial geometry of the dish reads clearly to every person at the table. This is where the dish lives or dies: the colour arrangement must remain distinct and ceremonially legible, because overcrowding renders the composition indistinguishable and the dish fails on its own terms.
  5. 5
Scatter the pine nuts and walnuts across the surface as garnish, pressing them very lightly into place so they do not shift when the stock is added. Pour the hot, clear stock into the moat of the vessel to come level with but not submerge the components, preserving the visibility of each colour band above the liquid.
  6. 6
Place lit charcoal in the central chimney of the sinseollo vessel, so the heat rises steadily from within and warms the broth gently and evenly without the turbulence of a direct flame beneath the pot, which would disturb the colour arrangement and cloud the stock. The dish is ready to serve when steam rises steadily from the surface and all components are heated through — the broth should be uniformly hot but must not boil violently.
