    Measure the soba flour into a heavy pan set over low heat. Bring a separate vessel of water to a full boil; allow it to settle for no more than a few seconds so it stands at approximately 95°C. The flour must be dry and free of lumps before water touches it — sift if necessary.

    Pour the near-boiling water onto the flour in a single rapid addition. Immediately work the mass with a wooden spatula using decisive, folding strokes. Speed and confidence are required here: this is where the dish lives or dies — hesitation allows uneven gelatinisation, and over-working develops excessive elasticity. Work only until the mass is fully cohesive, with no dry flour remaining and no sticky, gluey patches. The paste is ready when it pulls cleanly from the sides of the pan and holds its form as a single, soft body.

    Remove the pan from the heat immediately. The correct texture is that of extremely soft mochi — yielding under the spatula, neither sticky against the pan nor grainy when pressed. It should carry a clean, direct buckwheat bitterness and nutty warmth perceptible through the steam.

    Turn the paste into lacquer bowls at once, dividing into four portions. Soba-gaki degrades rapidly: gumminess sets in within minutes. Serve alongside tsuyu at a stronger concentration than would be used for zaru-soba, with wasabi and grated daikon on the side. The paste is taken with chopsticks, pinched into a portion, and dipped.
