Sift together the flour, baking powder, speculoos spice blend, and salt. Add to the butter mixture and bring together into a smooth, cohesive dough. Do not overwork.

The vergeoise hydrates the flour, the butter absorbs the spice oils, and the dough develops both flavour depth and a workable, rollable texture that same-day preparation cannot produce. The dough is ready when it is firm, cohesive, and carries a pronounced spice fragrance on cutting.

Preheat the oven to 170°C. Roll the rested dough on a lightly floured surface to exactly 4 mm thick — thicker than this produces a chewy result rather than the required crunch. Cut into rectangles or press firmly into carved wooden moulds (Saint Nicholas figures, windmills, animals), releasing cleanly onto lined baking sheets.

Bake for 12–15 minutes. The biscuits are done when they are deeply brown — not golden. The dark mahogany colour signals the Maillard reaction between the vergeoise sugars and the proteins; this is the caramel-spice flavour, not over-baking. Remove and cool on a wire rack; they crisp fully as they cool.
