    Bring a large pot of water to a rolling boil. Blanch the wild garlic leaves for exactly 30 seconds — no longer, or the fresh, grassy character is lost. Lift out immediately and refresh under cold water. Squeeze completely dry in a clean cloth; residual water will destabilise the mixture. Chop finely. The leaves should smell strongly of garlic.

    Place the cubed stale bread in a bowl. Pour the warm milk over it and leave to soak until the bread is fully saturated and soft throughout. Squeeze the soaked bread firmly in both hands until no milk runs free — the mass should feel dense and cohesive, not wet.

    Combine the squeezed bread, chopped wild garlic, eggs, salt, and nutmeg in a bowl. Add flour gradually, working the mixture until it holds its shape when pressed but does not stick to the hands. This is the step on which the dish lives or dies: the mixture must be dry enough to shape without falling apart in the water, yet not so loaded with flour that the dumpling becomes heavy — judge by feel, not by a fixed quantity.

    With dampened hands, shape the mixture into rough ovals of approximately equal size. They should hold their form cleanly and feel firm to a light press.

    Bring a wide pan of well-salted water to a gentle simmer — not a boil. Lower the dumplings in carefully and simmer for 8–10 minutes. They are done when they float steadily at the surface and feel set, not yielding, when pressed lightly with a spoon.

    While the dumplings finish, melt the butter in a small pan over medium heat and continue cooking until the solids turn a deep amber and the butter smells of toasted hazelnuts — burro nocciola. Remove from the heat immediately.

    Lift the dumplings with a slotted spoon, drain briefly, and arrange on warmed plates. Spoon the brown butter over, finish with Grana Trentino, and serve at once. The plate should carry the scent of the spring forest — wild garlic, brown butter, aged cheese.
