    In a wide pan over medium-high heat, cook the ground beef with the diced onion and chopped garlic, breaking the meat into small pieces throughout. Add the cumin, chili powder, and salt. Continue until the fat has rendered and the beef is cooked through and lightly coloured, with no raw grey remaining. The filling should smell of toasted cumin and carry a visible sheen of rendered fat.

    Divide the hot rice among four bowls or plates. Immediately scatter the shredded cheese directly onto the hot rice — this is where the dish lives or dies: the cheese must melt from the heat of the rice alone, integrating with the sticky rice and beef fat to create a unified base. Insufficient cheese or rice that has cooled will prevent this fusion and the dish collapses into separated components. The cheese should visibly soften and begin to melt within thirty seconds of contact with the rice.

    Spoon the hot taco beef over the melted cheese layer. Top with the shredded lettuce and diced tomato, placing them fresh and cold directly onto the hot beef. The temperature contrast between cold vegetables and hot beef beneath is deliberate and essential. Finish with salsa spooned over the top and sour cream if using. Serve immediately: the fresh vegetables will wilt if the dish sits.
