    Pat the beef chunks thoroughly dry. Heat the oil in a heavy pot or wok over high heat until the surface shimmers. Sear the beef in batches without crowding, turning to colour all sides. The surface of each piece should be a deep mahogany with a visible fond developing on the base of the pot — this caramelisation is the foundation of broth colour and depth.

    Reduce the heat to medium. Add the doubanjiang directly to the pot and fry briefly in the residual oil until the paste darkens slightly and its aroma sharpens — 30 to 60 seconds. Deglaze immediately with the rice wine, scraping up the fond from the base of the pot.

    Return all beef to the pot. Add the soy sauce, five spice powder, and enough water to cover the beef by approximately 5 cm. Bring to a boil, skimming any grey foam that rises. The surface should run clear before the lid is set.

    Reduce to the lowest possible simmer — the surface should tremble rather than roll. Braise uncovered or partially covered for a minimum of 3 hours. The broth will deepen to brick-red. The dish is ready only when a chopstick pushed into a chunk of shank meets no resistance at its centre and the beef yields entirely without springing back.

    Taste the broth for balance: it should be rich and savoury but not aggressively salty, since the suan cai and chili condiments will add further salt at the table. Adjust soy sauce with restraint. For the fullest flavour, allow the beef to rest in its broth overnight in the refrigerator before reheating the following day.

    Bring a separate pot of unsalted water to a rolling boil. Cook the wide wheat noodles according to their thickness until springy and just yielding at the centre — they should offer slight resistance to the bite. Drain and divide among deep bowls.

    Ladle the hot broth over the noodles and arrange the braised beef on top. Add a portion of rinsed, chopped suan cai to each bowl. Serve the chili bean sauce separately so each diner adjusts heat to preference.
