Fold mirin into the batter; fold in the cubed octopus gently.

Heat takoyaki pan over medium-high heat for 2 minutes; brush each cup with neutral oil.

Fill each takoyaki cup halfway with batter using a small ladle; place one piece of octopus in the center, then top with batter to three-quarters full.

Using two takoyaki picks (or chopsticks), rotate and turn each ball every 45 seconds, working methodically through all balls, until golden and crispy on all sides — 8–10 minutes total.

Transfer to a serving plate; immediately coat with takoyaki sauce, dust generously with aonori and bonito flakes (which will curl from residual heat), and top with pickled ginger.
