    Soak the tamarind block in the measured warm water for 20 minutes, so the pulp loosens from the seeds and fibres and the water draws out the full depth of sour flavour rather than extracting a thin, pale liquid. Work the softened pulp with the fingers, then press through a fine sieve, discarding all seeds and fibres. The strained extract should be smooth and uniformly dark.

    Combine the strained tamarind extract, chopped dates, and jaggery in a heavy saucepan and bring to a gentle simmer over medium heat, stirring to dissolve the jaggery. Cook, stirring regularly, until the dates have completely softened, approximately 10 to 12 minutes, so they surrender their flesh rather than remaining as distinct, chewy pieces that will not pass through the sieve. Press the mixture through a sieve or process briefly and strain, pushing the dates through firmly to carry their body into the liquid and give the finished chutney its characteristic thick, glossy flow.

    Return the strained liquid to the pan and add the roasted ground cumin, dried ginger, red chilli powder, and kala namak, so the spices steep into a still-warm base and release their fragrance evenly through the chutney rather than sitting raw on the surface. This is where the dish lives or dies: reduce over medium-low heat, stirring frequently, until the chutney coats the back of a spoon cleanly and a line drawn through the coating holds its edge without flooding back — at this point the volume will have reduced to approximately 150 ml. A chutney that drips is under-reduced and will disperse through chaat without the concentrated flavour impact the dish requires.

    Remove from the heat and allow to cool completely at room temperature, so the chutney thickens to its final consistency and you can read the true balance of sweet, sour, heat, and the sulphurous mineral depth of kala namak — this last note is the signature chaat aroma and cannot be approximated with sea salt. Taste and adjust, then decant into a sealed jar. The chutney keeps refrigerated for up to two months and improves over the first week as the flavours integrate.
